  1. Sandwich greens are another great use for arugula.

    We had some leftover tofu from a great garlic/balsamic rice vinegar/scallions recipe, and we put it between some sandwich thins with laughing cow spreadable cheese and tomato slices. The arugula REALLY added to this concatenation of flavors.
