What a delicious vegetarian meal! These babies were roasted at 350F for 30 minutes and stuffed with a mixture of quinoa and sautéed shiitakes, shallots, garlic and turnip greens. Salt and pepper and a little balsamic vinegar finished off the mix. We topped them with a light sprinkling of Parmesan and served them with a simple side salad. It was an easy Tuesday night dinner- so good!
