Sausage and Peppers

We’ve been blessed with an abundance of peppers and I’ve been meaning to “get creative” with them, but mostly I just keep coming back to my old standby, sausage and peppers. An easy, versatile dish that requires minimal prep and ingredients, this is one of my beloved comfort foods. I occasionally serve over pasta, but usually just break off a hunk of crusty French bread and serve as a stand alone dish. I love the sweet hot Italian sausages from The Spotted Trotter. Freezes well, too, for a quick and delicious weeknight meal!

2 Tbs olive oil
1 lb peppers, sliced
1 clove garlic, chopped
1 med yellow onion, sliced (optional)
1 lb sausages, sliced
2 cups tomato sauce
Salt and pepper to taste

Sautée peppers, onion and sausages in oil, until peppers and onions are soft and sausage is browned. Add garlic and tomato sauce and simmer about 15 minutes. Season as needed.
